Bún thịt nướng

Trưa nay tụi tôi mời ba tên em họ của xã qua ăn brunch (gộp cả bữa sáng và bữa trưa). Được một bữa đãi toàn thịt bò. Khai vị là món thịt bò cuốn rau diếp, tiếp theo là món bún thịt nướng. Một cân thịt hết cái veo!!!! Công thức này là của bạn Nhóc Con nhé!

Nguyên liệu

Thịt bò (hoặc thịt ba chỉ) cắt lát mỏng
2 cây sả, băm nhuyễn
2 thìa vừng (tôi không thích vừng lắm nên bỏ qua món này)
3 tép tỏi băm
3 củ hành tím băm
1 thìa cafe đường vàng
1 thìa cafe mật ong
1 thìa cafe nước mắm
1 thìa cafe dầu mè
1 trái lê (cắt từng lát, ép khoảng 2-3 thìa nước cốt rồi ướp thịt bò cho mềm - tôi cũng bỏ qua bước này)

Cách làm

1. Ướp thịt và tất cả các gia vị trên, để vào tủ lạnh qua đêm cho ngấm.

2. Xiên thịt vào que, bọc trong giấy nhôm.

2. Làm nóng lò ở nhiệt độ 370F rồi cho thịt vào nướng khoảng 30 phút là chín. Khi thịt gần chín thì quét lên bề mặt một chút xíu mật ong hoặc nước ướp thịt để tránh bị khô, xác thịt.

3. Xếp bún, dưa leo, cà rốt bào mỏng, rau xà lách cắt nhỏ, rắc lạc rang (hoặc hành phi), và thịt nướng vào. Rưới nước mắm chua ngọt rồi chén.

Nước chấm chua ngọt:
Đun sôi 250g đường (có thể thêm nếu thích ngọt hơn) với 0,5l dấm gạo trên lửa nhỏ khoảng 15', hớt bọt nếu có. Dung dịch dấm đường này có thể đổ vào chai sử dụng nhiều lần rất thuận tiện cho nhiều món ăn khác nhau như sườn xào chua ngọt, cá sốt chua ngọt, pha chế nước chấm bún chả, bún nem ...
***ghi chú không thể thiếu là các loại nước chấm bún nên làm nóng trước khi ăn thì mới ngon, vì bún lạnh mà

Nước chấm bún chả:
Lấy nước chấm chua ngọt nói trên một lượng vừa đủ ăn + nước mắm + nước sôi để nguội vào theo thứ tự và nêm nếm cho đến khi có vị vừa miệng + tỏi băm nhuyễn + hạt tiêu rang xay vỡ+ ớt băm bỏ hạt

Dìu dịu canh chua thịt viên

Nguyên liệu:
Thịt lợn xay 200 gr
Giá đỗ 100 gr
Sấu hoặc tai chua
Cà chua 2 quả
Muối tiêu
Hành, mùi tàu

Cách làm:


Thịt lợn xay trộn với hành thái nhỏ, 1 thìa muối tiêu, để 10 phút cho ngấm

Giá đỗ rửa sạch. Cà chua thái múi cau


Đặt nửa nồi nước lên bếp, cho cà chua, tai chua (hoặc sấu) vào đun sôi, tiếp đến nặn thịt xay thành những viên nhỏ cho vào nồi nướ. Nêm muối tiêu cho nước canh vừa miệng.



Nhỏ lửa cho sôi âm ỉ khoảng 10 phút để thịt chín.

Sau đó văn to lửa, giá đỗ và hành mùi thái nhỏ vào.


Cà chua chín mềm màu đỏ mọng nhìn rất ngon mắt, cà chua lại giàu vitamin rất tốt cho sức khỏe.

Cháo sườn


Công thức của chị Khai Tâm này (có sửa đổi một chút):

200g sườn
100g bột gạo
Muối, nước mắm

1. Sườn chặt nhỏ, đun sôi cùng một chút muối. Khi sôi thì vớt sườn ra, rửa lại cho sạch, và đổ nước đục đi.

2. Cho sườn vào nồi cùng nước mới, ninh thật nhừ.

3. Trong lúc ninh sườn thì đổ 100g bột gạo với 1 cup nước lạnh, khuấy đều cho tan, để nở khoảng 1-2h.

4. Nước sườn sôi thì đổ từ từ (3) vào. Vừa đổ vừa khuấy. Nếu loãng thì đổ thêm bột gạo pha nước. Nếu đặc thì đổ thêm nước sôi. Lưu ý là gạo sẽ vẫn còn nở nữa.

5. Nêm nước mắm cho vừa miệng.

6. Tắt bếp, đậy vung khoảng 15' cho gạo nở hết.

7. Bật bếp trở lại, mở vung khuấy đều đến khi cháo sôi là được.

Ăn nóng kèm quẩy nóng, rắc tiêu và ớt bột (nhà không có ớt nên tôi bỏ qua bước này).

Nguyên liệu:

- 500-700g sườn

- 400g bột gạo

- Gia vị và nước mắm

Cách nấu:

Gạo hòa với khoảng nửa lít nước, khuấy tan tạo hỗn hợp sánh. Ngâm khoảng 1-2h trong khi ninh xương.

Sườn rửa qua, luộc sơ với một chút muối. Khi nước sôi, vớt sườn ra rửa sạch, đổ nước và nêm gia vị, ninh nhừ.

Đổ từ từ gạo vào nồi nước, vừa đổ vừa khuấy đều tay. Khi hỗn hợp trở nên sánh, có thể thêm nước tạo thành độ đặc vừa ý. Nếu hơi loãng có thể cho thêm bột gạo hòa tan với nước. Nêm nước mắm vào sau cùng. Tắt bếp, đậy nắp vung cho gạo nở hết, khoảng 15′.

Bật bếp trở lại, vừa nấu vừa khuấy cho đến khi nồi cháo sôi.

Dùng nóng với quẩy cắt nhỏ và hạt tiêu xay cùng ớt bột.

Theo gợi ý của chị huytrang, thái bánh mỳ ra thành các mẩu nhỏ, xào với bơ (tỷ lệ: 2 lát bánh mỳ gối với 2 thìa bơ) cho đến khi bánh mỳ giòn.

Pork Cutlets Parmesan

We took a classic recipe and trimmed it for less fat and fewer calories but kept the taste.

Ingredients

Serves 4

  • 12 ounces pork tenderloin
  • 2 large egg whites
  • 1/4 cup plain dried breadcrumbs
  • 1/4 cup grated Parmesan
  • 3 tablespoons all-purpose flour
  • Coarse salt, for seasoning
  • 1 tablespoon olive oil
  • Lemon wedges and parsley sprigs, for serving

Directions

  1. Slice pork tenderloin into 12 rounds. Place rounds between two sheets of plastic wrap; with a meat mallet or small heavy skillet, pound to 1/8 inch thick.
  2. In a shallow bowl, beat egg whites with 1 tablespoon water. In another bowl, combine breadcrumbs and Parmesan. Place all-purpose flour in a third bowl. Season pork with salt. Dip pork in flour, then in egg mixture. Dredge in breadcrumb mixture; pat it in.
  3. In a large nonstick skillet, heat olive oil over medium-high heat. Saute half the cutlets until golden brown and cooked through, about 1 minute per side. Repeat with another tablespoon oil and remaining pork. Serve with lemon wedges and parsley sprigs.

Pork Loin Stuffed with Figs and Apricots

Of the hundreds of varieties of figs grown, the amber-colored Calimyrna, from California, is most common in the United States. This is the kind we've used in our recipe. Black Mission Figs, which are a little less sweet, are also widely available.

Total: 1 hour 10 minutes

  • 1/2 cup stemmed and finely chopped dried Calimyrna figs
  • 1/2 cup finely chopped dried apricots
  • 2 cloves garlic, finely chopped
  • 3/4 teaspoon rubbed sage
  • 1 or 2 white sandwich bread, toasted and cut into 1/4-inch pieces (to equal 1 cup breadcrumbs)
  • Coarse salt and ground pepper
  • 2 boneless center-cut pork loin, (2 1/2 pounds)
  • 1 tablespoon olive oil

Directions

  1. Preheat oven to 450 degrees. Combine figs and apricots in a medium bowl; pour boiling water over them. Set aside for 5 minutes. Drain in a fine-mesh sieve; return to bowl. Add garlic, 1/4 teaspoon sage, and breadcrumbs; season generously with salt and pepper. Stir until breadcrumbs are moistened.
  2. With a long, sharp knife, cut a slit lengthwise down the middle of the loin, without cutting through; open it like a book. Place filling in the middle, packing lightly. Draw the edges of the loin together so that they slightly overlap, forming a cylinder around stuffing. (If it is hard to close, remove some of stuffing.) Tie pork with cotton kitchen twine every 1/2 inch.
  3. Line the bottom of a 9-by-13-inch roasting pan with foil. Sprinkle pork with remaining 1/2 teaspoon sage; season generously with salt and pepper. Rub with oil; place in pan. Roast until meat registers 150 degrees.on an instant-read thermometer, about 35 minutes; let rest (temperature will keep rising), 10 minutes. Snip string; discard. Slice meat; use a wide spatula to serve.

Pork Chops with Apple-Raisin Relish

Apples and pork chops are a delicious and traditional combination. The vinegar in the relish helps offset the sweetness of the raisins and sugar. Try the tart-sweet relish with other cuts of pork, such as roasts, tenderloin, or ham.

Ingredients

  • 2 tart green apples, such as Granny Smith ( 3/4 pound), peeled and cut into 1/2-inch chunks
  • 1/4 cup sugar
  • 2 tablespoons raisins, or dried currants
  • 1 tablespoon cider vinegar, or white-wine vinegar
  • 1/2 teaspoon ground ginger pinch of cayenne pepper
  • 4 pork loin chops, each about 1/2 inch thick (about 1 1/2 pounds total)
  • Salt and pepper
  • 2 tablespoons vegetable oil

Directions

  1. Make the relish: In a medium saucepan, combine the apples, sugar, raisins, vinegar, ginger, and cayenne over medium-high heat until the sugar dissolves, about 2 minutes. Reduce heat; simmer, partially covered, until apples are soft, 10 minutes, stirring occasionally.
  2. Make the pork chops: Season chops with salt and pepper. In a large skillet, heat the oil over medium-high heat. Add the pork chops, and cook until browned, 3 to 4 minutes per side. Serve with apple-raisin relish.

Pork Shoulder Braised in Hard Cider

Serves 8

  • FOR SACHET D'EPICE
  • 3 thyme sprigs
  • 3 fresh flat-leaf parsley sprigs
  • 1/2 teaspoon whole black peppercorns
  • FOR BROWNING PORK
  • 3 pounds pork shoulder
  • Coarse salt and freshly ground pepper
  • Olive oil
  • FOR AROMATICS
  • 1 small leek, white and pale-green parts, finely chopped and washed well (1/2 cup)
  • 3 cloves garlic, peeled and minced
  • 1 small parsnip, peeled and cut into 1/2-inch dice (1/2 cup)
  • 1/2 small celery root, peeled and cut into 1/2-inch dice (1/2 cup)
  • FOR BRAISING PORK
  • 4 cups hard cider
  • 1/2 cup Basic Chicken Stock
  • FOR GARNISH VEGETABLES
  • 3 medium leeks, white and pale-green parts, halved lengthwise and washed
  • 3 medium parsnips, peeled and halved lengthwise
  • 1 1/2 small celery roots, peeled and cut into 1-inch wedges
  • FOR SAUCE
  • 1 tablespoon unsalted butter, room temperature
  • 1 tablespoon all-purpose flour
  • 1/4 cup heavy cream (optional)
  • 2 teaspoons grainy mustard, plus more for serving

Directions

  1. Make sachet d'epice: Wrap the thyme, parsley, and peppercorns in a small piece of cheesecloth and tie with twine to form a sachet.
  2. Brown pork: Heat the oven to 400 degrees. Use paper towels to pat pork dry, then season generously with salt and pepper. Heat a large Dutch-oven or other pot with a tight-fitting lid over high heat for 2 minutes, then add enough oil to barely coat bottom of pot and heat until shimmering. Cook the pork until well browned on all sides, turning with tongs once each side is seared (remember not to move the meat too soon or it will not brown properly and stick to pot; wait until it releases easily). This will take a total of 12 to 15 minutes; reduce the heat if the bottom of the pot is getting too dark (you want browned, not burnt, bits for flavoring the sauce). If, after removing the pork, you see burned bits, wipe out the pot and add more oil before proceeding. (Or deglaze pot with a little water, bringing it to a boil and scraping up the browned bits; then pour off liquid and bits).
  3. Cook aromatics: Reduce heat to medium and add the leek, garlic, parsnip, and celery root. Season with salt and pepper. Stir frequently and cook until leek is translucent, about 2 minutes.
  4. Braise pork: Return pork to pot, and pour in 1 cup cider. Bring to a boil, and deglaze pot, scraping up browned bits from bottom. Add remaining 3 cups cider and the stock along with the herbs sachet. (The liquid should come about halfway up the sides of the pork; add more stock if it doesn't). Bring to a boil on top of the stove. Cover, and put in the oven. Reduce oven temperature to 325 degrees. Cook until pork is very tender (it should offer little resistance when pierced with a knife), 2 to 2 1/2 hours, turning over with tongs about halfway through so the meat cooks evenly.
  5. Finish braising with garnish vegetables: Transfer the meat to a plate and strain the braising liquid through a fine sieve, pressing on the solids to extract as much liquid as possible (discard solids). Return the liquid and the pork to the pot and add the garnish vegetables, nestling them into the liquid (the liquid should almost reach top of vegetables). Bring to a boil on the stove then return to oven and cook until vegetables are tender, about 30 minutes. Lift out the vegetables and arrange them on a serving platter. Transfer pork to another plate. Cover both and keep warm near the stove.
  6. Finish sauce: Make the beurre manie by rubbing together the softened butter with the flour until completely incorporated. Pour off and measure the cooking liquid remaining in the pot; you should have about 2 cups. Return it to the pot and boil until reduced to 1 cup, about 6 minutes. Whisk in the beurre manie and continue whisking until the liquid comes to a boil, then lower heat and simmer for 1 minute (to remove the raw starchy taste). Turn off the heat and stir in the cream (if using) and mustard.
  7. Serve: Use a fork to shred the meat into large chunks. Transfer to platter with vegetables. Serve with sauce and more mustard on the side.

Turn on the oven to 450F (232C)

Ingredients

pork loin
Dried figs in red wine
salt
pepper
chopped fresh rosemarry

Bake at 450F (232C) till the meat browns, reduce the heat to 350F (176C), cook for about 45 minutes. MAke sure the liquid in the pan doesn't dry out.

Thịt xá xíu (Non-baked Char Siew)

Hihi. Món này em khoái lâu rồi mà mầy mò hoài vì ko có lò nướng. Cuối cùng túm được CT Non-baked sướng quá làm xơi luôn :cheers:



Nguyên liệu:
_300g thịt ba chỉ (thịt dọi)
_150ml nước
_40g đường
_1/2 tsp muối
_1/2 tbsp dark soya sauce
_1/2 tbsp light soya sauce
_Một ít màu đỏ thực phẩm (ở đây em xài màu điều)
_1 tbsp dầu ăn.

Cách làm:
_Hòa tan muối và đường với dark và light soya sauce cùng với nước, cả màu thực phẩm cũng cho vô lun. Dùng nước đó ướp thịt trong vòng ít nhất 4h (qua đêm càng tốt).
_Đổ nước ướp thịt vào nồi, sôi lên thì bỏ thịt vào, để cho sôi lại rồi bật lửa nhỏ nhất. Nhớ ko đậy nắp vung ko là thành thịt hầm đấy ạ :D .
_Đến khi nước còn lại trong nồi đặc và sánh thì cho dầu ăn vào đun sèo sèo là bỏ ra để nguội.
_Thái mỏng ra là xơi được rồi :chef:

- Trung luoc chin ky, boc vo, de nguoi. Dung dau cua dia (folk) dam vao phan long trang de ti nua nau cho ngam
- Thit ba chi thai mieng to co bang bao diem, uop chut nuoc mam, muoi, duong (ti teo duong thoi).
- Cho dau an vao noi binh thuong (khoang 2, 3 thia dau), cho duong vao (khoang 2, 3 thia duong), de lua trung binh. lam nuoc hang`. De lua trung binh cho den khi duong chay thanh mau nau trong veo thi cho thit vao, tat bep, dao deu tay. Cho thit ngam nhuom deu nuoc hang.
- Chuyen cho thit do vao noi ap suat (chi thay nha em co cai noi ap suat), do nuoc xam xap (tuy em thich an nhieu hay it nuoc thi cho nuoc vao), them mam muoi, cho trung vao. Dun noi soi thi dong van ap suat lai, tat bep. Cu de nguyen noi tren bep khoang 20-30 phut roi xa van ap suat, xong. Nau bang noi ap suat thi nhanh va tiet kiem dien hon, em lai do phai trong.
- Muon an thit kho tau do ngan thi em lam du*a chua, dua gop, dua chuot ngam dam, kimchi an kem thi an mai cung duoc :D Nhat la duoi nuoc thit voi com. Neu ma nau nhieu qua thi chia vao hop cho vao tu da, luc nao an thi lay mot hop ra xa da, dun soi lai la ok. Nha chi luc nao lam cung lam mot noi to roi an dan.

Công thức thịt kho tàu:
ghi lại công thức theo định lượng hôm qua làm, chứ bình thường nhà chị toàn làm gấp đôi số lượng này, vì cùng một công kho thịt mà
250g thịt lợn (thịt bụng, thịt ba chỉ, thịt đùi, thịt sườn đếu được, nhưng nhất định phải có mỡ :D)
Nhà Emi hay kho thịt sườn lẫn thịt bụng. Kho tàu nhất định phải chọn loại có cả mỡ thì mới ngon, mà lại ngại béo nên dùng lẫn cả hai loại. Thịt sườn của Tây thì nhiều thịt lắm chứ không phải dẻ sườn đâu em riucey nhé
3 thìa đường nâu
2 nhánh hành hương băm nhỏ (còn gọi là hành tím, Đức: Schallotten)
2-3 thìa nước mắm
4-5 thìa nước 
một ít nước tương Maggi


Cách làm thịt kho tàu:

1. 250g thịt ướp với 1 thìa đường nâu, ít hành hương băm nhỏ và 2 thìa nước mắm ít nhất 30 phút 
2. Trong lúc chờ ướp thịt thì thắng nước hàng (nước màu), khâu này chú ý nhé vì nước đường thắng đúng độ thì thịt sẽ có màu đẹp, không đen quá hay nhạt quá
2 thìa đường + 1 thìa nước cho vào nồi đun đến khi chuyển màu nâu đậm thì nhắc nồi ngay khỏi bếp. Đợi một chút nó sẽ chuyển màu đậm hơn thì cho thêm 3-4 thìa nước nữa cho nước loãng bớt. Đổ nước này vào nồi thịt đã ướp. Nhắm chừng chỗ nước cho nồi thịt kho chỉ chưa đến 1/2 bát ăn cơm thôi nhé
3. Đun nồi thịt trên bếp nhỏ lửa đến khi nào thịt chín mềm, nước cạn gần hết thì nêm nếm lại gia vị cho vừa miệng (chị thường cho thêm chút nước mắm và xì dầu,263) đun tiếp đến khi mỡ của thịt chảy ra, mỡ của miếng thịt trở nên trong. 

* Khi kho thịt có thể cho thêm trứng luộc đã bóc vỏ, dừa tươi cắt miếng tùy thích. Vị của thịt là thấm đủ gia vị và hơi ngọt một chút. Thịt kho làm nhiều có thể chia phần vào các hộp kín để tủ lạnh, mỗi lần ăn đun lại thịt càng mềm hơn và ăn càng ngon.
**Nhà chị hay dùng nồi áp suất để kho thịt cho nhanh, khi nồi xì hơi thì tắt bếp. Xả nước lạnh vào nắp nồi cho cho nhưng kho kiểu đó em không quen thì dễ cháy nồi ^^, vì kho áp suất phải dùng ít nước hơn kho bằng nồi thường thì thịt mới có thể ra mỡ được


Nhà chị hay kho bằng thịt chân giò, vì ăn nó giòn hơn mà mỡ của nó không quá ngán, chị lại thích không thích kho mềm quá, thi thoảng hứng lên mua dừa tươi về kho bằng nước dừa luôn thì không cần chưng nước hàng nữa vì nước dừa đun lâu sẽ tự động ngả sang mầu cánh gián đẹp lắm hihi ..

Sườn Nướng Xả Ớt (Spicy Grilled Lemongrass Ribs)

This recipe is delicious with all meats not just pork ribs.

Ingredients:
-1 -1/2lb pork, beef or chicken
-4 cloves garlic
-1 spring onion
-3 tbs sugar
-3-4 tbs fish sauce
-1 stalk lemongrass
-Thai chilies
-1/2 tsp pepper

What to Do:
Finely chop garlic, onion, lemongrass and chilies. Briefly crush spices using a mortar and pestle. Add sugar and fish sauce and give the a taste test. The sauce should be on the “heavy” side (a little too sweet and salty), because when you add the meat it “lighten” the flavors a bit. Add meat and toss well, marinate for at least an hour, before grilling.

Crunchy Baked Pork Chops

Serves 4. Published January 1, 2008. From Cook's Illustrated.

This recipe was developed using natural pork, but enhanced pork (injected with a salt solution) will work as well. If using enhanced pork, eliminate the brining in step 1. The bread crumb mixture can be prepared through step 2 up to 3 days in advance. The breaded chops can be frozen for up to 1 week. They don't need to be thawed before baking; simply increase the cooking time in step 5 to 35 to 40 minutes.

Ingredients


Table salt
4 center-cut boneless pork chops , 6 to 8 ounces each, 3/4 to 1 inch thick, trimmed of excess fat
4 slices hearty white sandwich bread , torn into 1-inch pieces
1 small minced shallot (about 2 tablespoons)
3 medium garlic cloves , minced or pressed through garlic press (about 1 tablespoon)
2 tablespoons vegetable oil

Ground black pepper
2 tablespoons grated Parmesan cheese
1/2 teaspoon minced fresh thyme leaves
2 tablespoons minced fresh parsley leaves
1/4 cup unbleached all-purpose flour plus 6 tablespoons
3 large egg whites
3 tablespoons Dijon mustard

Instructions

  1. 1. Adjust oven rack to middle position and heat oven to 350 degrees. Dissolve 1/4 cup salt in 1 quart water in medium container or gallon-sized zipper-lock bag. Submerge chops, cover with plastic wrap, and refrigerate 30 minutes. Rinse chops under cold water and dry thoroughly with paper towels.

  2. 2. Meanwhile, pulse bread in food processor until coarsely ground, about eight 1-second pulses (you should have about 3 1/2 cups crumbs). Transfer crumbs to rimmed baking sheet and add shallot, garlic, oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Toss until crumbs are evenly coated with oil. Bake until deep golden brown and dry, about 15 minutes, stirring twice during baking time. (Do not turn off oven.) Cool to room temperature. Toss crumbs with Parmesan, thyme, and parsley.

  3. 3. Place 1/4 cup flour in pie plate. In second pie plate, whisk egg whites and mustard until combined; add remaining 6 tablespoons flour and whisk until almost smooth, with pea-sized lumps remaining.

  4. 4. Increase oven temperature to 425 degrees. Spray wire rack with nonstick cooking spray and place in rimmed baking sheet. Season chops with pepper. Dredge 1 pork chop in flour; shake off excess. Using tongs, coat with egg mixture; let excess drip off. Coat all sides of chop with bread crumb mixture, pressing gently so that thick layer of crumbs adheres to chop. Transfer breaded chop to wire rack. Repeat with remaining 3 chops.

  5. 5. Bake until instant-read thermometer inserted into center of chops registers 150 degrees, 17 to 25 minutes. Let rest on rack 5 minutes before serving with lemon wedges.

  6. The 30-Minute Brine

  7. You might be tempted to skip the brining step when preparing Crunchy Baked Pork Chops. Don't. Center-cut chops are quite lean, and left untreated they will be very dry and chewy, even when cooked to medium (an internal temperature of 150 degrees). The salt in the brine changes the structure of the muscle proteins and allows them to hold on to more moisture when exposed to heat. My tasters had no trouble picking out the chops that I had brined versus chops that I had left untreated.

  8. If you're accustomed to brining a turkey for the holidays, you might think you don't have time to brine pork chops for a weeknight recipe like this. But I found that making the brine super-concentrated (with 1/4 cup of table salt dissolved in 1 quart of water) gets the job done in just 30 minutes-the time it will take you to prepare the fresh bread crumb coating. And my potent brine fits, along with four chops, in a medium container or gallon-sized zipper-lock bag. No brining bucket needed.

  9. One exception: If you've purchased enhanced chops injected with a salt solution, don't brine them. The injected solution will make the chops moist, even spongy, and brining will make the meat way too salty. We prefer the flavor of natural chops and find that 30 minutes in a strong brine makes them plenty juicy.

Pasta with Pork Ragu

After the holidays indulgences, I'm sure I'm not the only one craving something homey and comforting. And after all the religious pomp and circumstances we were exposed to -voluntarily or not- during that time, I guess I'm also not the only one with a hankering for a little rebellion. That's when an idea struck me. I knew just what I wanted to eat, Strozzapreti pasta.

Strozzapreti pasta is a traditional pasta shape from the Romagna region of Italy. The Italian name is literally priest-chokers in English. Legend has it that this particular shape, sort of resembling a short, twisted bit of rope, signified a religious rebellion in the region long suffered under Papal rule (from the 13th all the way to 19th century). Romagna housewives would cook this pasta for the local priests, in hope that they would choke to death as they scoffed it down greedily. A heretic pasta for my very own post-holidays rebellion, how perfect! To go with this pasta I made a ragu. You don't have to be Italian to find ragu homey, yes? This time my ragu would be made of pork, because why offend only one religion when you can easily do two (or three, actually)?

So that's what I had for dinner, a heretic pasta in a haram (or trefah) ragu. I must admit, however, that my rebellion was rather short-lived. It took me and two dear friends and neighbours Katy and Beccy nearly half an hour to roll just enough for the three of us for dinner -those Romagna housewives were seriously vindictive- so we quickly abandoned our hell-bound operation and turned the rest of the dough into Pici pasta, which are basically long, hand-rolled strips of slightly uneven thickness. The Pici are rustic and toothsome, not to mention much easier to deal with than Strozzapreti.

I was unable to find a good recipe for Strozzapreti online, so I grabbed my well-loved copy of Cooking by Hand to see what recipe I could adapt for it. I found the recipe for Pici, which was described as a "fat, hand-formed pasta from the countryside surrounding Siena." Since both Pici and Strozzapreti are hand-rolled, and Paul (as in Bertoli, the author) described this dough from this recipe as being a little bit softer, easier for hand-rolling, with a little olive oil to guard against sticking, it sounded just perfect for what I needed.

If you've never made homemade pasta, I highly recommend this recipe. You won't need specialty flour or equipment to make it. Trust me, it's really easier than you think.

Here's Paul Bertoli's recipe for Pici

12oz (about 4 cups) "Baker's Choice" flour, which is basically AP flour with a bit higher portein level. I used King Arthur AP flour
7oz (about 7/8 cup) cool water
3 1/2 tsp olive oil

The recipe, like many rustic pasta recipes, calls for putting the flour right on the countertop or pastry board, then make a well in the center and pour the wet ingredients into it, then, it suggests using a fork to slowly incorporating the liquid and the flour together. I strongly warn all but those with the dexterity of a monkey on crack against this method. The "well" wall will inevitably break, sending floury, sticky water streaming outwards and downwards like room-temperature lava stream.

What I suggest instead is measure your ingredients into a medium size bowl, then, with a fork, stir the ingredients together. You'll end up with a moist, lumpy, somewhat separated globs of incorporated dry and wet ingredients, which can be dumped onto the countertop without creating a mess. Work that dough a little, to get them to be a more or less cohesive dough. Don't worry about kneading or making a smooth dough right now, just wrap it with some plastic and let rest for half and hour. This is to let the flour absorb the moisture completely before you knead and roll.

After half an hour, unwrap the dough onto a well-floured board. Wash your hands in cold tap water, dry them thoroughly, dip them into your flour container to coat with flour. Knead the dough, pressing the base of your palm into the dough, pushing forward a little, then fold the dough into itself and again push down and forward with your hand. Make sure the board and your hands are always well-floured to prevent sticking. Do it until you get a smooth, soft lump of dough. This shouldn't take that much time at all.

Rolling

To roll into Strozzapreti shape, cut the dough into 8 pieces and roll each out thin, cut into about 3/4 inch wide and 3-4 inches long strips. Pick up each one and fold into half lengthwise, the roll gently between your hands to make a folded, slightly twisted piece of pasta. Place them on a well-floured cookie sheet, making sure they are not touching each other because they will stick badly.

To roll into Pici, just cut out a small piece and stretch and roll it into long strips. Come on, we've all played with playdoh, I don't really need to teach you how to roll a dough into long strips, do it? Anyway, see the picture above for what it's supposed to look like.

If you plan to cook the pasta right away, make sure you cover the cookie sheets with kitchen towel (yes, well-floured to prevent sticking). If not, the pasta will be dry in places, which will make them cook unevenly. If you intend to make a large amount of past and will have enough time (at least overnight) to let the pasta dry thoroughly before you cook them, then don't bother with the towel.

Thịt Kho Nước Dừa (Braised Pork in Coconut Juice with Eggs and Bamboo Shoots)

Ingredients:
-2lbs pork belly or shoulder
-5 eggs
-5 cloves garlic
-2 green onions
-3 tbs fish sauce
-4 tbs sugar
-1 tbs coconut milk or water
-coconut juice or water
-salt to taste
-bamboo shoots (optional)

What to Do:
Cut pork into small ‘chunks’. Boil and peel eggs. Crush and mince garlic and onions. Boil together coconut milk and sugar until golden brown; add garlic and onions give it a quick stir before adding pork and fish sauce. Lastly, add eggs and coconut juice. Simmer until pork tender add salt to taste. Add bamboo a few mins before serving. Serve with fresh herbs and dưa giá (pickled bean sprouts).

Bánh gối kiểu Nga

Hôm thứ bảy vừa rồi nhà mình và các nhà hàng xóm xung quanh tụ tập liên hoan mùa hè. Những vụ liên hoan nhân dịp thay mùa đã thành thông lệ. Nhà mình làm món bánh gối kiểu Nga - một dạng pate chaud - nhanh, bổ, rẻ - thay cho món nem rán mọi khi ăn hoài cũng ngán. Món bánh này mình đã ăn thử ở một cửa hàng bánh của Nga, về hỏi cô, cô chỉ cách làm, rất dễ
Công thức bánh gối kiểu Nga - pate chaud:
4 củ khoai vừa
1/2 củ hành tây
100g thịt lợn xay
hạt nêm, muối
1 gói bột nhiều lớp (Blätterteig/puff pastry)
1 quả trứng, đánh tan (optional)
Cách làm bánh gối kiểu Nga - pate chaud:
- bột nhiều lớp để tan đá (khoảng 10 phút)
- khoai tây, hành tây cắt nhỏ hạt lựu rồi trộn chung với thịt xay, ướp hạt nêm, muối khoảng 15 phút.
- cho nhân vào miếng bột, gói lại, hình tam giác hay vuông, chữ nhật tùy ý. Lấy dĩa ấn lên mép bánh cho chặt lại hoặc dùng trứng để "dán"
- Trước khi nướng có thể phết lên bánh một lớp trứng bánh sẽ vàng ươm trông ngon mắt hơn. Tuy nhiên bánh ở cửa hàng mình thấy họ không phết trứng nên mình cũng không làm
- Nướng 20-22 phút trong lò ở 200°C
Bánh này ăn nóng là ngon nhất. Nếu để dành hôm sau ăn sáng thì quay trong mikrowelle cho nóng lại. Bánh mềm nên trẻ con bé cũng măm măm được.

Bún Chả Đồng Xuân

Nguyên liệu:

- 2 lbs thịt heo xay + 1/4 mỡ heo (bằm hoặc xay nhỏ)
- 3 lbs thịt nạc vai ( thái mỏng như thịt nướng)
- Bún sợi nhỏ
- 1 củ cà rốt
- củ cải trắng
- đậu phộng rang gĩa nát
- Rau sống = xà lách, rau thơm, tía tô, dưa leo, húng lủi, ngò

- nước mắm pha
.......2 Tablespoons nước mắm ngon
.......2 Tablespoons đường
.......1/3 Tablespoon giấm
.......4 Tablespoons nước nóng
.......tương ớt



Nước sốt ướp thịt:

- 3 1/2 tablespoons nước mắm hiệu 3 con cua
- 3 tablespoons đường
- 1 tablespoons nước hành ( hành xay vắt lấy nước )
- 3 tablespoons dầu hào
- 1 tablespoon mật ong
- 1 tablespoon dầu mè
- 1/4 tablespoon tỏi xay
- 1 tablespoon sả bằm nhuyễn
- 1 tablespoon cooking wine
- 2 tablespoons dầu ăn
- 1 tablespoon tương ớt hiệu con gà

Thực hiện:

Chả:
Thịt heo xay + mỡ heo trộn đều , rồi nêm ( 3 tsp nước mắm + 3 tsp đường + 1/4 tsp bột ngọt + 1/2 tsp tiêu ) nhồi đều , rồi vo tròn từng viên nhỏ , sau đó đè dẹp viên thịt . Khi dùng thì cho lên lò than nướng chín

Đồ chua:
Cà rốt, củ cải tỉa hoa , rồi thái khoanh tròn mỏng , xong đem ngâm với ( 1 chén giấm + 1/2 chén đường + 1/4 tsp muối ) ngâm khoảng 1 -> 2 tiếng.

Luộc bún:
Nước nấu sôi , cho bún vô luột , khi nước sôi trở lại đun thêm khoảng 3 phút , tắt bếp , ngâm bún trong nồi thêm 5 phút , rồi trút ra rỗ xả nước lạnh, để nguyên trong rỗ cho thật ráo nước . Rồi xắp ra dĩa.

Thịt nướng:
Nước sốt quậy đều, múc khoảng 4 -> 5 TSP cho vô thịt ướp đều , để khoảng 1 -> 2 tiếng ( càng lâu thịt sẽ thấm ngon hơn ) . Nước sốt dư cất trong tủ lạnh để dùng sau này .

Xắp thịt lên vỹ nướng, cho vỹ thịt lên lò than ( gas ) nướng cho vàng đều 2 mặt. Rồi trút thịt nướng ra dĩa , tiếp tục nướng cho đến khi hết thịt.

Cách dùng:

Múc nước mắm pha vô chén, kế cho thịt nướng + chả nướng + đồ chua vô chén , trên rắc đậu phộng rang. Xà lách + rau thơm + bún, gắp miếng thịt ( hoặc chả )cho vô rồi cuốn lại . Ăn hết thịt lại cho thêm vô chén nước mắm.

Nguyên liệu:

600 g thịt cốc lếch (pork chop)
25 g xả
2 tép tỏi
1 củ hành hương
1 muỗng cà phê apple cider vinegar (dấm táo), nếu không có có thể thay thế bằng dấm thường
2 muỗng súp mirin
2 muỗng súp mật ong
1 muỗng súp tương ăn phở (hoisin sauce)
3 muỗng súp dầu
2 muỗng súp nước tương
muối, tiêu

Chuẩn bị:
1) Xả, tỏi băm nhỏ (càng nhỏ càng tốt, hoặc bỏ vào máy xay nhỏ)
2) Hành hương tháy mỏng.
3) Bỏ dầu vào chảo phi hành hương vàng thơm.
4) Thịt cắt dày khoảng 2 ~3 mm, độ to vừa ăn.
5) Làm lò nướng nóng ở nhiệt độ 375 °F (khoảng 190℃)

Cách làm:
1) Trong một tô pha nước ướp thịt, cho dầu và hành hương phi thơm, dấm, mirin, nước tương, 1 tí muối, 1 tí tiêu, xả, tỏi ở khâu (1) vào, trộn đều. Bỏ thịt ở (4) vào trộn đều. Đậy một lớp nilông lên trên và cất vào tủ lạnh để qua một đêm. (hình 1)
2) Sắp thịt đã ướp lên miếng giấy bạc . Bỏ vào lò nướng đã được làm nóng đến nhiệt độ quy định.
3) Pha mật ong và tương ăn phở để đó.
4) Nướng thịt khoảng 7~10 phút thì dùng một cái cọ quét mật ong và tương ăn phở pha sẵn ở (3) đều lên mặt thịt, trở mặt còn lại, trét đều. Tăng nhiệt độ lên một tí (khoảng 20℃) Nướng thêm khoảng 7~10 phút hoặc cho đến khi thịt xém vàng là được.

Khoai tây hầm thịt heo

Nguyên liệu: ( phần 4 người)

500 g thịt heo
500 g khoai tay
200 g carrot
2 củ hành tây
1 củ hành hương
Bột gia vị bouquet garni (garnished bouquet)
Một viên gia vị gà.
Đường, muối seasoning.

Chuẩn bị:
1) Cà rốt, khoai tây gọt sạch vỏ, cắt khúc vừa ăn.
2) Hành tây cắt thành 8 phần to.
3) Hành hương cắt mỏng.


4) Thịt heo cắt lát dày khoảng 3 mm.


Chế biến:
1) Chảo nóng cho dầu vào. Dầu nóng thì bỏ hành hương vào phi hành cho thơm rồi bỏ cà rốt và khoai tây vào xào khoảng 3~5 phút.


2) Bắt nồi đựng 1/2 cup nước, bỏ viên gia vị gà, một muỗng cà phê đường vào. Nước sôi thì cho (1) vào hầm cho khoai tây và cà rốt mềm.



3) Cho dầu vào chảo. Dầu nóng cho hành tây vào xào khoảng 1 phút, cho thịt heo vào xào cho đến khi thịt heo săn lại. Rắc bột gia vị bouquet garni và muối seasoning đều lên chảo, trộn đều, thịt chín thì tắt lửa.

Nguyên liệu:

500 g thịt sườn heo
50 ml nước tương
5 g ngũ vị hương
10 g tỏi
5 g đường
mật ong
muối

Chuẩn bị:

1) Thịt sườn cắt miếng dày khoảng 4 cm.
2) Tỏi ép nhỏ
3) Trộn đều 50 ml nước tương với tỏ ép nhỏ và 5 g đường, 5 g ngũ vị hương, một tí muối biển trong một tô to để ướp thịt
4) Làm lò nướng nóng đến 200℃.

Cách làm:
1) Bỏ thịt sườn vào tô gia vị đã pha ở trên, dùng nĩa xâm vào thịt cho hỗn hợp nước gia vị ngấm vào trong thịt. Làm cả hai mặt. Ướp một đêm trước khi nướng.




2) Xếp thịt lên miếng giấy thiếc, quét một lớp mật ong đều lên 2 mặt thịt rồi đặt vào lò nướng. Nướng khoảng 30 ~ 40 phút là được.

Thịt chín thái lát mỏng khoảng 2mm, xếp lên đĩa. Cuốn thịt với bánh tráng, dưa leo và rau thơm chấm với nước mắm pha loãng có đủ vị chua -ngọt- cay rất thơm ngon.

Five spices baking pork ribs recipe

500 g pork ribs
50 ml soy sauce
5 g spice
10 g garlic
5 g sugar
honey
a little salt

1) Cut the center of long pork ribs into two small pieces
2) In a big bowl, combine soy sauce, chopped garlic (as small as possible), sugar, spice, a litle salt. Mix well.
3) Put pork ribs into the bowl. Use fork to stab pork ribs on both sides. (So that the sauce will marinate)
Marinate at least 1 hour or overnight.
Before baking, pour honey on pork ribs. Bake at 350°F, about 20 ~30 minutes
