Bún thịt nướng

Trưa nay tụi tôi mời ba tên em họ của xã qua ăn brunch (gộp cả bữa sáng và bữa trưa). Được một bữa đãi toàn thịt bò. Khai vị là món thịt bò cuốn rau diếp, tiếp theo là món bún thịt nướng. Một cân thịt hết cái veo!!!! Công thức này là của bạn Nhóc Con nhé!

Nguyên liệu

Thịt bò (hoặc thịt ba chỉ) cắt lát mỏng
2 cây sả, băm nhuyễn
2 thìa vừng (tôi không thích vừng lắm nên bỏ qua món này)
3 tép tỏi băm
3 củ hành tím băm
1 thìa cafe đường vàng
1 thìa cafe mật ong
1 thìa cafe nước mắm
1 thìa cafe dầu mè
1 trái lê (cắt từng lát, ép khoảng 2-3 thìa nước cốt rồi ướp thịt bò cho mềm - tôi cũng bỏ qua bước này)

Cách làm

1. Ướp thịt và tất cả các gia vị trên, để vào tủ lạnh qua đêm cho ngấm.

2. Xiên thịt vào que, bọc trong giấy nhôm.

2. Làm nóng lò ở nhiệt độ 370F rồi cho thịt vào nướng khoảng 30 phút là chín. Khi thịt gần chín thì quét lên bề mặt một chút xíu mật ong hoặc nước ướp thịt để tránh bị khô, xác thịt.

3. Xếp bún, dưa leo, cà rốt bào mỏng, rau xà lách cắt nhỏ, rắc lạc rang (hoặc hành phi), và thịt nướng vào. Rưới nước mắm chua ngọt rồi chén.

Nước chấm chua ngọt:
Đun sôi 250g đường (có thể thêm nếu thích ngọt hơn) với 0,5l dấm gạo trên lửa nhỏ khoảng 15', hớt bọt nếu có. Dung dịch dấm đường này có thể đổ vào chai sử dụng nhiều lần rất thuận tiện cho nhiều món ăn khác nhau như sườn xào chua ngọt, cá sốt chua ngọt, pha chế nước chấm bún chả, bún nem ...
***ghi chú không thể thiếu là các loại nước chấm bún nên làm nóng trước khi ăn thì mới ngon, vì bún lạnh mà

Nước chấm bún chả:
Lấy nước chấm chua ngọt nói trên một lượng vừa đủ ăn + nước mắm + nước sôi để nguội vào theo thứ tự và nêm nếm cho đến khi có vị vừa miệng + tỏi băm nhuyễn + hạt tiêu rang xay vỡ+ ớt băm bỏ hạt

Gà rán sốt chanh mật ong

Công thức gà rán sốt chanh mật ong:

Nguyên liệu:
600g cánh gà, cắt đôi hoặc đùi gà, cắt miếng vừa ăn
Gia vị ướp thịt gà: trộn tất cả: 2 thìa cafe ngũ vị hương, 1 thìa rượu (mình dùng rượu ngũ vị hương đang có sẵn ở nhà, nên dùng 2 thìa), 1 củ hành tây nhỏ băm vụn, 1 thìa cafe muối, chút xíu đường, chút nước mắm
Gia vị cho phần sốt chanh mật ong: trộn tất cả: 50ml nước chanh vàng (khoảng 1/2 quả), 1 thìa dầu hào, 1 thìa đường (bớt nếu không thích sốt ngọt nhiều), 1 thìa mật ong, nước ướp thịt gà còn dư.

Cách làm:
1. Dùng dĩa xâm nhiều lỗ lên thịt. Ướp gia vị ít nhất 30 phút.
2. Giữ lại nước ướp gà cho vào gia vị cho phần nước. Đem thịt rán vàng trên lửa to với chút dầu, rán mặt có da trước cho ra mỡ, không cần chín bên trong mà thấy bên ngoài thịt vàng là được.
3. Chắt bớt nước mỡ trong chảo (đừng chắt bỏ hết nếu thích thịt gà béo ngậy :D), cho phần nguyên liệu làm nước sốt đã chuẩn bị vào chảo, đun 5-10 phút cho sốt sánh lại, thịt gà ngấm sốt và chín hoàn toàn cả bên trong.

Nguyên liệu:

- 250gr miến (thực ra nhà còn ít nên làm tất. Chả nhớ độ bao nhiêu :P)
- Rau cải bó xôi (nếu bạn thích ăn nhiều rau thì đừng ngần ngại mua nhiều vì lúc xào rau sẽ ngót)
- 1 củ cả rốt (mùa này đang là mùa cà rốt, tranh thủ mà ăn :P)
- 10 cái nấm hương
- 1 củ hành tây
- 150gr thịt bò
- 1 thìa tỏi băm (1 thìa là như 1 thìa ăn phở ý)
- 4 thìa xì dầu
- 1/2 thìa đường
- 1 thìa vừng trắng rang (nhà tớ chả có, chẹp)
- 1/2 thìa tiêu xay
- Muối, dầu mè, dầu ăn

Cách làm

Rau cải rửa sạch cắt khúc.
Cà rốt cạo vỏ thái chỉ.
Hành tây lột vỏ thái lát.
Nấm hương ngâm nở rửa sạch, thái mỏng.
Miến ngâm nước cho mềm.
Thịt bò thái mỏng.

Đun nước sôi, cho miến vào chần chín. Vớt miến ra cho ngay vào nước lạnh để miến không bị nhũn và các sợi miến không bị dính vào nhau.

Tiếp theo là xào các nguyên liệu như hình. Lúc xào hành tớ quên ko chụp ảnh nên phải cheat bằng cách lấy trên mạng :D



- Trước tiên xào hành tây, đặt chảo lên bếp, đun nóng chút dầu ăn, cho hành tây vào xào, nêm chút muối cho ngấm. Hành tây chín tái đổ ra bát.

- Tiếp tục xào cà rốt cho chín. Tương tự như thế bạn xào riêng nấm, rau cải.

- Phi thơm tỏi , để lửa to xào thịt bò chín tới, nêm chút gia vị cho vừa ăn rồi cũng đổ chung vào nồi rau củ.

- Cho các nguyên liệu vào một cái nồi to.

- Miến vớt ra khỏi nước lạnh, để 1 phút cho ráo bớt nước, dùng kéo cắt cho sợi miến không bị dài quá.

- Cho miến vào nồi nguyên liệu, thêm xì dầu, vừng rang, đường, dầu vừng, hạt tiêu, trộn đều lên. Bước này nên dùng găng tay nylon trộn sẽ đều hơn. Cho thật nhiều vừng nhé, tớ chả có đủ vừng để cho :(. Nêm các thứ vừa miệng.

Bạn có thể thèm một ít vị chua. Đừng ngần ngại trộn thêm 1 thìa dấm để món ăn thêm phần hấp dẫn nha :D

Món này dễ làm và dễ ăn :). Nếu bạn ăn chưa hết, bọc lại để tủ lạnh thì lúc mang ra sợi miến vẫn bị hơi khô. Hãy để vào lò vi sóng quay độ 30s-1 phút (tùy lượng còn thừa), món miến ra sẽ nóng ngon phết ý :P

Bánh rán mặn

Khác với bánh rán ngọt, thông thường có hình dạng tròn, bánh rán mặn được phân biệt qua hình dáng thuôn dài như quả trứng và dùng kèm nước chấm chua ngọt ngâm đu đủ xanh.

Công thức:

Nhân:

- 120g thịt xay

- miến dong

- mộc nhĩ

- 1 củ cà rốt nhỏ

- Gia vị vừa miệng

Miến ngâm nở, cắt ngắn khoảng 2cm. Mộc nhĩ thái chỉ, rồi thái nhỏ. Cà rốt cũng vậy, gọt vỏ thái chỉ, sau đó thái nhỏ. Các nguyên liệu trên trộn đều trước. Sau đó trở ra trộn vỏ.

Vỏ bánh:

- 250g bột gạo nếp

- 50g bột gạo tẻ

- 1 củ khoai tây 50g luộc chín, bóc vỏ, nghiền mịn

- 30g đường

- 5g muối

Trộn các nguyên liệu trên cùng với nước tạo hỗn hợp dẻo vừa nặn (bằng độ dẻo của vỏ bột bánh rán ngọt). Ủ khoảng 30′ – 1 tiếng.

Chia bột và nhân thành những phần tương ứng. Nếu nhân bánh khoảng 25-30g thì bột vỏ sẽ khoảng 45-50g. Chia nhân bánh và nặn thành hình thuôn dài.

Dàn miếng bột mỏng, đặt nhân vào giữa và gói lại. Lưu ý không để khoảng trống có không khí lọt vào.

Thả bánh vào chảo dầu vừa sôi, chiên ngập dầu. Dùng đũa trở đều, liên tục lần lượt từng chiếc.

Dùng nóng với nước chấm chua ngọt.

Antipasti of mozzarella, chilli, and lemon crostini

starter | serves 4

ingredients

• 8 slices ciabatta bread
• 1 clove garlic
• extra virgin olive oil
• 2 balls of buffalo mozzarella
• Sea salt and freshly-ground black pepper
• 1 red chilli, deseeded and finely sliced
• a small handful of fresh basil leaves
• 1 lemon for zesting

Heat a griddle pan until it’s really smoking hot, then griddle each slice of ciabatta for a couple of minutes on each side until they are nicely charred.

Cut the garlic clove in half, rub each ciabatta slice with garlic and drizzle with a little olive oil. Tear the mozzarella evenly over the 8 crostini. Season well with salt and pepper, sprinkle over the sliced chilli and basil leaves and grate over the lemon zest. Finish with another drizzle of olive oil.

Our Tiramisu Recipe

To make this tiramisu, you will need
- A 20x20cm glass bowl.
- 2 large mixing bowls
- Wooden spoon
- Spatula (optional but it can scoop out all the cheese better n help with the folding)
- Electric mixer (manual mixer works just fine but needs some extra work)

Ingredients:
- 500g Mascarpone cheese
- 5 egg whites (put it in the prepared large mixing bowl)
- 3 eggs yolks (put it in the other mixing bowl)
- 3 tablespoons of granulated sugar
- 1 pinch of salt
- Good-quality chocolate power to sprinkle on top of the cake
- 2 cups of cool coffee (I use expresso shots but Americano is fine)
- 1 pack of ladyfinger cookies (24 individual cookies)
Instructions:

*Making the cream

- Beat the egg yolks with all the sugar well until the sugar is evenly distributed.
- Add the mascarpone cheese in slowly and mix it at the same time with a wooden spoon until they completely blend. You will have a yellow cream mixture.

- Add 1 pinch of salt to the bowl containing the egg whites, whisk it well with the electric mixer for 10 minutes at maximum speed until stiff peak form (with the manual mixer, just keep whisking until it's foamy and a peak is formed when you lift the mixer out of the mixture). You will have a white foamy mixture.

- Using wooden spoon, slowly fold the white mixture into the yellow mixture. Be careful do not mix them otherwise they will become watery. (You fold it in the downward and upward motion).

Now you have the mixture ready for the tiramisu. Keep it in the fridge while you prepare the coffee. Pour the coffee into a wide-mouthed bowl so you can dip the cookie in it later. Let it cools to room temperature. We can start resemble the dessert.

* Resembling:

- Dip half amount of the ladyfingers in the cool coffee (one by one, do not let it soak for too long, about 2-3 second for each cookies which is only enough for dipping and lifting it out immediately). Once you lift the cookie out of the coffee, place it in the glass bowl so as to half of the cookies will fit in and cover the bottom of the bowl completely.

- Pour half of the cream mixture on top of the cookie layer. Even it out so it has the same thickness all over the cookies.

- Repeat the dipping and placing in the bowl with the other half of the cookies. And then pour the rest of the cream on top and even it out.

- Finish off by sprinkling coco power on top of the top cream layer evenly.

- Put the finish tiramisu in the fridge for 4 hours or more so the cream will be thicken and stay firmly.
- Cut the tiramisu in desired size and shape, place it in a plate.
Ready to serve. ^_^


Note: The quality of tiramisu is varied upon the quality of eggs (the fresher, the better)

Broccoli Cheddar Soup Recipe

Look for deeply green, tight heads of broccoli. I typically avoid any heads that have yellowing florets or seem died out. If you like a slightly creamier soup, stir in a generous dollop of creme fraiche after pureeing. You can easily make this soup vegan by using olive oil and omitting the cheese/creme fraiche, and you can make it gluten-free by doing something in place of the croutons.

croutons
5-6 ounce chunk of artisan whole wheat bread, torn into little pieces (less than 1-inch), roughly 3 cups total

1/4 cup butter or olive oil (I like 1/2 and 1/2)
1 1/2 tablespoons whole grain mustard
1/4 teaspoon fine grain sea salt

soup:
2 tablespoons unsalted butter or olive oil
1 shallot, chopped
1 medium onion, chopped
1 large potato, peeled and cut into 1/4-inch cubes (1 1/2 cups)
2 cloves garlic, finely chopped
3 1/2 cups light, good-tasting vegetable broth
1 large head of broccoli (12 ounces or 3/4 lb.), cut into small florets

2/3 cup freshly grated aged Cheddar, plus more for topping
1 - 3 teaspoons whole grain mustard, to taste
smoked paprika, more olive oil, creme fraiche (optional)

Preheat your oven to 350F degrees and place the torn bread in a large bowl. In a small saucepan heat the butter until it has melted. Whisk the mustard and salt into the butter and pour the mixture over the bread. Toss well, then turn the bread onto a baking sheet and bake for 10 - 15 minutes, or until the croutons are golden and crunchy. Toss them once or twice with a metal spatula along the way.

While the croutons are toasting, melt the butter (or olive oil) in a large saucepan over medium-high heat. Stir in the shallots, onion, and a big pinch of salt. Saute for a couple minutes. Stir in the potatoes, cover, and cook for about four minutes, just long enough for them to soften up a bit. Uncover, stir in the garlic, then the broth. Bring to a boil, taste to make sure the potatoes are tender, and if they are stir in the broccoli. Simmer just long enough for the broccoli to get tender throughout, 2 - 4 minutes.

Immediately remove the soup from heat and puree with an immersion blender. Add half the cheddar cheese and the mustard (a little bit a a time). If you are going to add any creme fraiche, this would be the time to do it. Now add more water or broth if you feel the need to thin out the soup at all. Taste and add more salt if needed.

Serve sprinkled with croutons, the remaining cheese, a drizzle of olive oil, and a tiny pinch of smoked paprika.

Serves 4 - 6.
