Vietnamese pork salad

Time to make: 20 minutes

Ingredients

  • 1 tablespoon sesame or peanut oil
  • 250g pork mince
  • 1 clove garlic, finely chopped
  • 1 small red onion, finely sliced
  • 1 bunch coriander, roughly chopped
  • 1 tablespoon chopped fresh mint
  • 1 red or green chilli, deseeded and chopped finely
  • 2 tablespoons fish sauce
  • 2 tablespoons peanut butter
  • 3 tablespoons roasted, unsalted peanuts
  • lime juice of 1
  • iceberg lettuce leaves, to serve

This is delicious served warm in 'cups' of lettuce leaves with sprouts such as alfalfa and snow pea shoots.

Instructions

Step 1 Heat oil in a pan, add garlic, onion and mince and cook gently until cooked through.

Step 2 Remove from heat and add rest of ingredients and stir until thoroughly combined.

Step 3 Serve in iceberg lettuce leaves.

Variations

Use any mince for this dish, or tofu is a great vegetarian option.
